Imagine a rich, Rhone-style wine with hints of chocolate, dry spices, a touch of clove and bouquet of luscious coffee.  Well, this is it. Serve the wine at room temperature and experience how the Grenache's gorgeous cinnamon aromas emerges from the juicy chocolate mid palate.  Enjoy!

Composition: 44% Grenache, 44% Syrah, 12% Mourvedre
Alch: 15%
Aging: 21 months in once used French oak

Pairing Notes: You can't go wrong pairing this wine with roasted vegetables and a shank of braised lamb.  

Cooking Notes: Try adding some braised lamb, duck, or chicken drippings to a mixture of 1 tablespoon of black peppercorns, 2 bay leaves, 2 quarts of chicken stock, 1 bottle of Dubindil GSM, 2 heads of garlic, 4 ribs of celery, 4 carrots, 1 large onion, 1 cup of mushrooms, and 2 tablespoons of fresh rosemary. Simmer and reduce 40%.  Drizzle over the meat.  Very good!
